Wicked Wheatberry Salad

I threw together this hearty salad with a few odds and ends from the pantry and fridge.  The result was surprisingly good.

Cook 1 cup of hard winter wheatberries (I threw a cup of grains in the rice cooker with 2 1/2 cups of water).  Combine in a large bowl:

wheatberries
1/2 head shredded cabbage
1/2 cup chopped walnuts
1/2 cup dried cranberries
2 stalks green onions
1 large roasted red pepper
2 tablespoons of balsamic vinegar
2 tablespoons of olive or sunflower oil
1 teaspoon basil

Enjoy with a nice cup of soup and some bread.
