I was inspired! Here's my version. Thanks Sara.
Cut an acorn squash in half. Microwave in a glass pan with an inch of water until guts are soft.
Saute in a pan with safflower oil:
1/3 cup cooked rice
2 tablespoons chopped pecans
2 tablespoons sunflower seeds
2 tablespoons raisins
1/2 cup chopped apple
Stuff acorn with the rice mixture. Enjoy!
